Its the sauce in this recipe that really makes it special. It is truly delicious. I find it works best with cod, but most white fish would be appropriate.
Recipe: Cod in a Tomato Sauce
- 1 Cloves Garlic
- 1/2 Onion, finely chopped
- 1 tin chopped tomatoes
- 1tbsp Vegetable stock
- Black Pepper
- Put all of the ingredients into a pan and bring to the boil. Cover the pan and reduce the heat, allowing the mixture to simmer for around 10minutes.
- Separately cook the cod in a pan, using butter or coconut oil, frying for around 3-4 minutes on each side.
- Serve the cod with the sauce. Enjoy!
