This isn’t a particularly creative recipe, I’ll admit, but I think it tastes great and is something I cook an awful lot, sometimes for a healthy breakfast, but often as a mid morning or afternoon snack. It’s very simple, and the imaginative amongst you will be able easily adapt to suit your tastes.
Spinach and Bacon Scrambled Egg
Ingredients
- 4 Eggs
- Spinach
- 3 Slices of Ham (or rashers of bacon)
- Black Pepper
Instructions
- Cook the spinach (I prefer to steam it), and grill the bacon at the same time (I cut any excess off the bacon prior to cooking). If using ham slices, just chop these into small pieces.
- Whisk up the egg with a tiny amount of milk (or even better use coconut milk – I use Kok Dairy Free) and scramble in a pan on the hob. Add a little black pepper. Chop the bacon/ham and add to the egg whilst it’s cooking.
- To serve, place the spinach on the plate and top with the scrambled egg and bacon/ham.

And that’s it, a nice simple breakfast! Obviously you can have more or fewer eggs (and egg whites if you still like to separate the yolk – I don’t as there is goodness in egg yolks) to suit you tastes and goals. You can actually make the scrambled egg without milk/coconut milk if you want. It won’t be quite as fluffy but it is still good. Finally, you may also want to mix in onions, peppers, turkey or anything else into the egg – the possibilities are endless.
